Recipe Recommendation: October

These are the recipes that I’ve tried from other bloggers/websites that I haven’t altered that we’ve really enjoyed for the month of October. It’s nice to recommend others plus it’s also encouraging to know the recipe didn’t just work for the person posting it but for others too (I’ve tried so many recipes that just simply haven’t worked).

I had some yoghurt go past its use by date and to avoid it going to waste, i thought I’d cook with it. Ethan and i have started baking together and I’ve found muffins are by far the easiest thing to make with him. This was a FANTASTIC recipe as it is super healthy and super easy and they were a hit with both Ethan and Kel.

I have a large jar of rice flour that really needs using up so I’ve been on the hunt for recipes that use rice flour. I thought I’d give these a go as again, it’s a fairly easy recipe to make with Ethan. I didn’t have gluten free oats on hand so i just used regular oats, which obviously is okay unless you need the biscuits to be gluten free. I also just used white rice flour because that’s all i had as well as raw sugar instead of coconut sugar and golden syrup instead of maple syrup because i didn’t mind that they weren’t healthy – we made them specifically as a treat. This probably means that i altered the recipe a bit too much to really be able to recommend it however i have to say that making them with rice flour worked super well. They were really chewy, which we way prefer over the hard Anzac biscuits. They went down a treat, especially as Ethan and i packed some up fresh out of the oven and drove to the shop and had them with Kel for morning tea!
